In this case, Shine chooses Appleton Estate Reserve, an eight-year-old Jamaican rum with aromas of fruit and oak and flavors of honey, vanilla, holiday spices and orange peel. He pairs the rum with pineapple juice, ginger, simple syrup and Angostura bitters—ingredients that, when combined, create the ideal mix of island.
